Chef and owner of the Arpège, Alain Passard is a passionate gardener and grows his own vegetables thus being able to tell the whole story of a dish, from the grain to the plate. Passard removed red meat from the menu in 2001, and from that day, fresh produce from this own farms are delivered daily to the restaurant. Arpège earned 3 stars Michelin in 1996 and maintains them to this day.
