Bruschetta with Mozzarella and Smashed Fresh Favas – fresh and colourful, for the touch of spring that we all need!

Ingredients for 4 servings

1 pound shelled fresh fava beans
2 tbsp. olive oil
1 tsp. fresh lemon juice
1/2 tsp. finely grated lemon zest
salt and freshly ground pepper
16 slice baguette
1/4 pound mozzarella
balsamic vinegar
2 tbsp. thinly sliced mint leaves

1. In a saucepan with boiling water, cook the fava beans until the skins start to loosen, for around 1 1/2 minutes. Drain and squeeze out the favas.
2. Transfer the favas to a food processor. Add the oil, lemon juice, and zest. Pulse to a coarse puree. Once this done, season with salt and pepper to taste.
3. Spread the fava-bean puree on the baguette slices and top with the mozzarella strips. Drizzle the toasts with the balsamic vinegar, add some mint on top, and serve.
