Ingredients for 2 servings
olive oil
lemon 1, juiced, 1/2 zested
oregano 1 tsp
garlic 2 cloves, crushed
chicken breasts 2, cut into chunks
cucumber ¼, seeded, peeled and grated
fat-free Greek yogurt 4 tbsp
iceberg lettuce shredded
red onion and tomato slices to serve
mint chopped to make 1 tbsp
flatbread 2, warmed

As usual, we prepare the marinade: 1tbsp olive oil with lemon zest, half the garlic, oregano and season. We sink the chicken in the marinade and then put in the skewers. Depending on what you have at your disposal, you can either fry or grill for 4 minutes on each side making sure they are cooked through. For the tzatziki sauce, you just mix yogurt with lemon juice, the other half of the garlic, cucumber and mint. Spread the tzatziki onto the warm flatbread, add the lettuce and then add in the chicken skewers.
