Walnut crusted salmon is yet another easy and fast recipe but with such an impact on your guests or family!
4 salmon fillets (4 ounces each)
4 tsp Dijon mustard
2 slices whole wheat bread, torn into pieces
4 tsp honey
4 tbsp finely chopped walnuts
2 tsp canola oil
1/2 tsp dried thyme
Preheat oven at 200C.
Arrange the salmon fillets skin down in a baking dish. Mix mustard, honey, bread, oil and walnuts in a food processor.
Using a spatula, spread the walnut crust mix over each salmon fillet.
Bake uncovered for 15-20 minutes until topping is lightly browned.
