1. If you love mushrooms like my ball & chain and I do, then you should really try this extra tasty recipe!
50g flour for dusting
250g mushrooms, thinly sliced
150g baby spinach leaves, chopped
2 eggs, beaten
100g grated Cheddar cheese
2 tbsp oil
salt and pepper to taste
30g herbs (thyme, pepper, chili powder)
Heat the oven at 180C and roll out the pastry on a floured surface in a deep 22cm baking case. Don’t trim the edges at this stage. Chill in the fridge for 15 minutes, while you prepare the filling.
Heat the oil in a large frying pan then cook the mushrooms for 1 minute. Add the spinach and cook for another 3 minutes. Put in the eggs, the Cheddar cheese, paprika and the rest of the spices, mix and cook for 2-4 minutes.
Trim the edges of the pastry and put the baking case in the 180C preheated oven for 15-20 minutes. Then take out the baking case and add the mushrooms and spinach filling over the pastry. Bake for another 45 minutes at 160C.
