Ingredients for 4 servings
2 lbs pork back ribs
2 white onions thinly sliced
8 tablespoons soy sauce
5-6 pcs anise
1 teaspoon of cloves
2 cinnamon sticks
2 tablespoons of spice mixture (mustard, fennel, coriander, etc.)
2 tablespoons oil
1 tablespoon freshly ground ginger
6 tablespoons honey (about 120g)
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 tablespoon of cornstarch
salt and pepper to taste

Cut ribs apart for easier serving. Wash them well and put them in a deep saucepan. Add a julienne chopped onion, 4 tablespoons soy sauce, pepper, anise, cloves, cinnamon and spice mix. Pour water to cover the ribs and bring everything to a boil for about an hour and 15 minutes.

In a frying pan or wok, add oil, put in a small chopped onion and soak it until it softens. Then add the ginger, honey, brown sugar, Worcestershire sauce, the rest of the soy sauce, lemon juice, cornstarch, salt and pepper to taste. Stir in the pan for a homogeneous sauce and leave on the fire for 2-3 minutes until it gets consistent. Once it’s done, let the sauce cool down in a bowl.

Place all ingredients together in an oven tray. Mix together making sure to coat all ribs with the sauce. Bake at 200 degrees for approximately 40 minutes turning or stirring occasionally.
Serve them with onion mashed potatoes.
