How to prepare the meat for 4 servings
700g pork tenderloin
3 tablespoons brown sugar
a teaspoon of salt
3 tablespoons soy sauce
1 egg white
2 green onions finely chopped
Frying oil (about 200ml)
½ cup of cornstarch

Wash the meat well, clean it and cut into cubes of about 2 cm. Then mix the pieces of meat with sugar, salt, soybean, the egg white and green onions. Leave the meat to marinate for an hour, then mix it with cornstarch, taking care to cover very well each piece of meat. Pour oil into a frying pan (wok) and fry the pork for 3-4 minutes in each side. Try and put the pieces of meat individually in the pan using a clamp. Take the meat out on a paper-coated plate to absorb excess oil and keep it warm, covered with aluminum foil.

How to prepare the veggies:
3 tablespoons of sunflower oil
3 bell peppers (red, yellow and green)
3 rods of apio
a large white onion thinly sliced
2 carrots
3 tablespoons of bean sprouts
Salt to taste
2 tablespoons of sugar
Thinly slice the bell pepper and do the same with apio, the onion and the carrots. In a wok or a larger frying pan, pour the oil, throw the onion in, then, when it becomes translucent, put the rest of the vegetables in and stir them until they become soft. Spice them with salt and sugar, mix well, then take them out on paper covered plate so as to absorb the extra oil and keep them warm until we prepare the sauce.

How to prepare the sauce:
250 ml of water (one cup of water)
¾ cup of brown sugar
1/3 cup of rice vinegar
4-5 tablespoons of sweet ketchup
2 tablespoons soy light sauce
3 tablespoons soy sauce dark
1 can of pineapple in syrup
3 tablespoons starch
100ml of water
Mix all the ingredients except the pineapple, in the wok and bring to a boil; then add the pineapple with juice, mix well and put the pan back on the fire for another 5 minutes on medium-high heat. In a small bowl combine the starch and the water, mixing well. Then pour the mixture into the pan. Reduce heat and simmer until thickened, about 5 minutes then remove from heat.
Mix the vegetables and the meat at the end and pour the sweet and sour sauce over them.

Voila! Sweet and sour pork!
Serve over rice and top with chopped green onions or parsley.
