If you want something easy and light, perfect for a summer picnic, then Tabbouleh salad should be your choice. What you should know is that the true star of this salad is the finely chopped parsley!

Ingredients for 6 servings

300g semolina wheat
3 average size tomatoes, seeds out
1 cucumber
3 small white onions
1 lemon
1 tbsp olive oil
3 sprigs mint
3 sprigs parsley
salt and pepper

1. Pour the semolina wheat into a large salad bowl. Add salt, then add the same quantity of boiling water and let it swell for 15 minutes. Drain very well and break up the grains with a fork.
2. Wash and cut the tomatoes into small cubes. Peel and finely chop the cucumber and then sautee it. Peel and finely chop the onions. Squeeze the lemon juice. Wash and finely chop the herbs.
3. Mix the semolina with all the vegetables. Sprinkle some olive oil and lemon juice, add the herbs and mix. Taste to check if it needs more seasoning. For the best taste, let it rest covered in the fridge, for 1 hour before serving.
